Chicken Cobb Salad

INGREDIENTS

Sweet potato - 320 g
Chicken breast - 181 g
Egg - 2 large
Cherry tomatoes - 85 g
Cucumber - 59 g
Avocado - 43 g
Bacon - 43 g
Baby spinach - 43 g
Reduced fat mayonaisse - 2.0 tsp




COOKING INSTRUCTIONS

  1. Place egg in a pan of cold water. Bring to boil. When boiling, turn off heat and allow to cool
  2. Cut bacon into squares and fry in a hot pan for 1 minute, then add thinly sliced chicken
  3. Cover and cook for 5 minutes. Meanwhile, cut sweet potato into cubes. Add and cook covered for a further 10 minutes, stirring every couple of minutes
  4. Add spinach and smoked paprika, stir and cover to wilt spinach, then take off heat and allow to cool
  5. Halve cherry tomatoes, slice cucumber and avocado, peel and chop boiled egg
  6. Mix mayonnaise into chicken, add all other ingredients and serve
