INGREDIENTS

Chicken breast - 115 g
Cos lettuce - 60 g
Shallots - 38 g
Olive oil - 1 tbsp
Dried apricots - 10 g
Balsamic vinegar - 2.5 tsp




COOKING INSTRUCTIONS

  1. Heat 1 tsp of the oil in a pan, add finely chopped shallots until lightly brown then add chicken and fry until cooked
  2. Place chicken and shallots on lettuce leaves. Add chopped apricots and dress with vinegar and remaining oil
  3. Roll up lettuce leaves like fajitas and enjoy
