Chicken Pitta

INGREDIENTS

Chicken breast - 64g
Pitta bread wholemeal - 64g
Spinach - 34g
Yogurt greek plain 0% fat - 1tbsp
Cucumber - 17g
Lemon juice - 1tbsp
Olive oil - 1tbsp
Mint - 3g
Garlic - 1 Clove




COOKING INSTRUCTIONS

  1. Mix the yoghurt, lemon juice, chopped mint and crushed garlic in a bowl with salt and pepper.
  2. Marinate the chicken in the mix for a couple of hours or overnight if possible.
  3. Loosley thread chicken onto skewers, place the skewered chicken on a hot griddle pan and turn frequently to stop burning.
  4. Slice the cucumber, mix with the spinach, and drizzle with olive oil.
  5. Place pitta on griddle pan to warm up, cut open and fill with salad and chicken.
