Chicken sweet potato bake

Chicken breast - 237g
Sweet potato - 211g
Peppers - 102g
Red onion - 77g
Lemon juice fresh - 1 tsp
Olive oil - 5tsp
Flaked almonds - 15g
Lemon zest - 10g
Red chilli - to taste
Cider Vinegar - 1tsp
Mixed herbs dried - 2tsp
Paprika - 1tsp


  1. Preheat oven to 180°C/375 °F.
  2. Grease a large casserole dish with olive oil.
  3. Place cubed chicken on the bottom of casserole dish. Lightly season with salt and pepper.
  4. In a bowl combine, sweet potatoes, red onion, peppers, chilli, chopped almonds, olive oil, cider vinegar, lemon juice and herbs. Toss to coat.
  5. Top chicken with herb and vegetable mixture.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10-15 minutes or until chicken is no longer pink and sweet potatoes are soft.
