Chicken with greek salad

INGREDIENTS

Chicken breast - 100 g
Red onion - 45 g
Cucumber - 40 g
Cherry tomatoes - 40 g
Kalamata Olives - 31 g
Feta cheese - 26 g
Fresh lemon juice - 1 tbsp
Fresh coriander - 1 handful
Fresh basil - 7 leaves
Red wine vinegar - 1 tsp
Olive oil - 1 tsp
Dried oregano - 1 tsp
Garlic - 0.5 cloves




COOKING INSTRUCTIONS

  1. Heat half the oil in a pan, add half the red onion, thinly sliced, and fry until brown and fragrant, then add cubed chicken breast, half the lemon juice and cook for a further 10 minutes until cooked through
  2. Make a dressing by mixing lemon juice, chopped basil and coriander, vinegar, remainder of olive oil, oregano and minced garlic
  3. Slice remainder of onion and mix with slced cucumber, halved cherry tomatoes, olives and cubed feta cheese
  4. Add chicken and fried onion and toss everything with the dressing
