Cod, coconut rice and broccoli

INGREDIENTS

Cod fillets - 395 g
Coconut milk - 160 ml
Broccoli - 171g
Rice basmati - 102 g
Olive oil - 1.5 tsp
Lemon juice - 1.5 tbsp
Water - 3 tbsp




COOKING INSTRUCTIONS

  1. Preheat oven to 180°C
  2. Rinse rice and place in pan with coconut milk and water, cook covered without stirring
  3. Wrap cod in foil with oil and chopped broccoli, place in oven and bake for 12 minutes
  4. Unwrap and drizzle over lemon juice, serve with coconut rice
