Cucumber & creamy spinach dip

INGREDIENTS

Spinach - 150g
Cucumber - 113g
Yogurt greek plain 0% fat - 94g
Cottage cheese - 90g
Medium fat soft cheese - 38g
Avocado - 26g
Lemon juice - 2.5tsp
Shallots - 11g
Chives - 2g




COOKING INSTRUCTIONS

  1. Pulse the shallots in a food processor until coarsely chopped.
  2. Add cream cheese, cottage cheese, yogurt, lemon juice, salt and pepper and pulse until just combined.
  3. Add spinach and chives and pulse until incorporated. Slice cucumber to dip.
