Egg and wild rice fritters with salad

Sweetcorn - 139 g
Wild rice - 75 g
Lettuce - 149 g
Cherry tomatoes - 107 g
Egg - 5 large
Egg white - 10 large
Olive oil (spray) - 11 sprays
Boil the rice for 20-25 minutes.
Mix the eggs and corn. Add some rice until you reach a honey-like consistency.
Heat a pan with the oil in. Add large spoonfuls of the mixture in and fry on each side until golden brown.
Serve with the lettuce, tomatoes and any excess rice
