Eggs & Salmon with Hollandaise

INGREDIENTS

Eggs - 6 small
Egg White - 2 medium
Spinach - 85g
Muffin - 203g
Lemon Juice - squeeze
Arla Skyr Natural - 192g
Chives fresh - 1 tsp
Mustard Dijon - to taste
Smoked Salmon - 85g
Egg Yolk - 1




COOKING INSTRUCTIONS

  1. Toast the muffins
  2. Wilt the spinach in a pan, place eon the toasted muffin and top with the salmon
  3. Scramble the eggs and place on the muffin
  4. In a small pan, warm the yoghurt, mustard, lemon juice and egg yolk, do not overheat or it will curdle. Pour Over
  5. Enjoy!
