Indian Beef Bhindi Masala

INGREDIENTS

Okra/ladyfingers/bhindi raw - 513g
Beef rump steak raw lean - 299g
Onions - 256g
Sweet potato - 160g
Peppers capsicum chilli green - 85g
Amchur - 4.5tsp
Vegetable Oil - 4tsp
Coriander/cilantro - 9g
Salt - to taste
Cumin seeds whole or ground - 2.5tsp
Pepper cayenne ground - 2tsp
Turmeric ground - 1tsp




COOKING INSTRUCTIONS

  1. Wash and dry okra, cut off ends and cut in half lengthways
  2. Heat oil in a pan, add cumin seeds and cook until they change colour, around a minute
  3. Add chopped green chilli, onion and turmeric, cook for about another minute
  4. Cut beef into strips, add to pan, cook for about 2 minutes
  5. Add finely cubed sweet potato, mix and cook for a further 3 minutes
  6. Add okra, mix well, cook covered on low heat, stirring occasionally until okra, beef and sweet potato are cooked
  7. Add salt and cayenne pepper to taste, mix in amchur, serve with fresh coriander
