Prawn and chilli stir fry with broccoli spears

INGREDIENTS

Sesame oil - 2tsp
Broccoli - 320 g
Cooked prawns - 380 g
Red chilli - 21g
Soy sauce - 3 tbsp
Cashew nuts - 58 g
Wholegrain brown rice - 87 g




COOKING INSTRUCTIONS

  1. Boil the rice as per pack instructions. Once cooked and drained, stir in half of the soy sauce.
  2. Steam the broccoli for 5-7 minutes.
  3. Heat the prawns and chilli in a wok in the rest of the soy sauce until cooked. Add the cashew nuts for the last few minutes to toast.
  4. Serve together.
