Spicy cashew chicken with rice and broccoli

INGREDIENTS

Chicken breast - 267 g
Broccoli - 171 g
White rice - 92 g
Cashew nuts - 64 g
Coconut oil - 1 tsp
Salt - 2 pinches
Red chilli pepper - 32 g
Lime juice - 1 tbsp




COOKING INSTRUCTIONS

  1. Rinse rice, add to a pan with twice the weight over water and salt, cook without stirring for 15 minutes
  2. Heat oil in a pan, add thinly sliced chicken and finely chopped red chilli, fry for 5 minutes, stirring regularly, add lime juice and fry for a further 10 minutes
  3. Chop broccoli finely, place in a large bowl, pour over boiling water from a kettle and cover for 3 minutes, then drain
  4. Add cashew nuts to chicken and cook for a further 3 minutes, serve with broccoli and rice
