Sweet potato and chicken salad

INGREDIENTS

Chicken breast - 90g
Sweet potato - 75g
Orange flesh - 60g
Couscous - 23g
Olive oil - 1tsp
Balsamic vinegar - 1tsp




COOKING INSTRUCTIONS

  1. Cube sweet potato and thinly slice chicken
  2. Heat a pan with a dash of oil, add chicken and sweet potato, cook for 15 minutes, stirring regularly
  3. Boil a kettle of water, pour over cous cous and cover, breaking up with a knife after 1 minute
  4. Slice oranges and add to chicken
  5. Serve chicken/sweet potato over cous cous and dress with remainder of oil and vinegar (optional)
