Sweet potato - 400g
Eggs chicken white - 5medium
Turkey breast cooked - 150g
Cottage cheese - 3tbsp
Oat flour - 95g
Spring onions - 20g
Parmesan cheese - 1tbsp
Baking powder - 1tbsp
Peppers capsicum - 6g
Sunflower seeds - 1.5tsp


  1. Pre-heat the oven to 180 C. Peel the sweet potato, grate into a bowl and combine well with the other ingredients. Save some of the parmesan and all of the sunflower seeds to sprinkle on top of the muffins before baking in the oven for 35 minutes, or until risen and golden brown.
  2. This recipe makes 4 muffins at 300kCal and 3 muffins at 400kCal
