Pre-heat the oven to 180 C. Peel the sweet potato, grate into a bowl and combine well with the other ingredients. Save some of the parmesan and all of the sunflower seeds to sprinkle on top of the muffins before baking in the oven for 35 minutes, or until risen and golden brown.
