Sweet potato tuna cakes

INGREDIENTS

Sweet potato - 135g
Canned tuna drained - 54g
Eggs chicken white - 48g
Eggs chicken whole - 35g
Oat flour - 15g
Mixed herbs dried - 1tsp




COOKING INSTRUCTIONS

  1. Cook the sweet potato in a pan of boiling water for 10 minutes or until starting to soften.
  2. Mash the potato, add the tuna, eggs, mixed herbs and oat flour and mix together. Divide into 4 patties.
  3. Fry patties in non-stick frying pan for 3-4 minutes each side or until golden brown.
