Sweet potato with spicy chicken

Sweet potato - 356g
Chicken breast - 209g
Greek plain yoghurt, 0% fat, or Skyr yoghurt - 4tbsp
Spinach baby raw - 107g
Pumpkin seeds - 58g
Parsley fresh - 9g
Coconut oil - 2.5tsp
Curry powder - 3.5tsp


  1. Microwave the sweet potato for 4-5 minutes and then bake in the oil in the oven at 180°C for 8-12 minutes.
  2. In the meantime, fry the chicken with the curry powder in the coconut oil
  3. Take off the heat and mix in well with the yoghurt and parsley
  4. Serve over the sweet potato with a side of fresh spinach leaves and a sprinkle of chopped pumpkin seeds
