Fresh pineapple - 30g
Whey protein isolate powder - 27g
Egg white - 1 small
Desiccated coconut - 2.5tbsp
Coconut oil - 1.5tsp
Maple syrup - 1tsp
Almond flour - 1tbsp
Skyr - 1.5tbsp


  1. Preheat oven to 160C
  2. Blend desiccated coconut and almond flour to a fine powder and mix with protein powder
  3. Melt coconut oil and stir in to powder with syrup and egg white
  4. Stir in pineapple, press into a baking tray and bake for 20 minutes, until top is firm
  5. Remove from oven and allow to cool fully, then enjoy with Skyr
