Tuna Pasta salad

INGREDIENTS

Tinned tuna (in brine, drained) - 267 g
Lambs lettuce - 107 g
Orzo - 107 g
Green olives - 43 g
Red pesto - 1.5 tbsp
Red onion - 32 g
Creme fraiche, half fat - 2 tbsp
Pine nuts - 23 g




COOKING INSTRUCTIONS

  1. Pour boiling water over pasta in a pan and cook according to package instructions
  2. Mix sliced olives, pesto, tuna, finely chopped red onion and creme fraiche in a large bowl
  3. Drain pasta, rinse with cold water to cool, mix in to tuna
  4. Gently fold in lettuce leaves and sprinkle over pine nuts
