Tuna steak and broccoli, with cashew nuts and quinoa

INGREDIENTS

Broccoli - 420g
Quinoa - 256g
Peppers capsicum red - 213g
Tuna steak - 171g
Lemon - 1
Tomatoes cherry - 107g
Cashew nuts - 60g
Soy sauce light and dark varieties - 6.5tsp
Chilli flakes - to taste
Garlic cloves - 1




COOKING INSTRUCTIONS

  1. Wrap the tuna, lemon (sliced), chilli, soy sauce and finely chopped garlic in foil, with the tomatoes and broccoli
  2. Bake in oven for 20-25 minutes at 160C until fish is cooked
  3. Cook quinoa to instructions on packet. If you are using dry quinoa, use one third of cooked weight to two thirds weight of water
  4. Sprinkle over crushed cashew nuts to serve.
