Turkey burgers with sweet potato & red onions

INGREDIENTS

Pepper - 2pinch
Salt - 2pinch
Egg white - 2 large
Sweet potato - 384g
Turkey mince, 4% fat - 331g
Rapeseed oil - 1.5tsp
Red onion - 128g
Garlic - 2 cloves
Spinach - Large Handful




COOKING INSTRUCTIONS

  1. Chop the sweet potato into cubes/wedges. Place in baking tray, drizzle over half the oil and bake at 200°C for 30-40 mins, turning once.
  2. Mix finely chopped onion, crushed garlic, salt, pepper, turkey mince and egg whites together, shape into burgers and grill at around 200°C, turning once, for 20-25 minutes until done.
  3. Serve together with the spinach side salad
