Vegan omelette

Tofu - 174g
Yeast flakes - 21g
Onions raw - 15g
Flaked almonds - 11g
Garlic - 1.5 cloves
Paprika - 1tsp
Black pepper - 1tsp
Salt - 1pinch


  1. Preheat the oven to 200°C/ 390°F.
  2. Finely chop the onion and garlic. Drain and dry the tofu before mixing with nutritional yeast, ground almonds and seasonings.
  3. Gently fry onion and garlic in an oven safe frying pan.
  4. Add the omelette mix to the pan, and cook for 5 minutes or until the edges start to dry.
  5. Transfer pan to the oven and cook until dry and deep golden brown – 10-15 minutes.
